Spinach Ricotta Bites

Can we say YUMMY! & pretty much guilt free.. Although, I think I am going to try them with egg whites, not whole eggs! 
One of my BEST friends, Melyssa made these last night..

 And........ I have been craving one since. 
She got the recipe off of Pintrest (That site I told you about!) However the link to the real one is here:

Anyways, Here is a copy of the recipe! Enjoy! 

Spinach Ricotta Bites (Makes 20 Bites)
2 Tbsp Butter
1 Small Yellow Onion, chopped
1 Garlic Clove, minced
2 Large Eggs, Beaten
1 Cup Ricotta Cheese (low or full fat ricotta will work)
1/2 Cup Mozzarella Cheese, shredded1/2 Cup Parmesan Cheese, Grated
1 10 Oz Pkg Frozen Chopped Spinach, defrosted and drained very good! 
1/4 Tsp Salt




1. Preheat oven to 350 degrees.
2. Melt the butter in a sauté pan over medium heat and cook the onions for 4 minutes until tender.
3. Add the garlic and cook an additional minute then set aside to cool.
4. Whisk eggs in a bowl and stir in ricotta, mozzarella and parmesan cheeses.
5. Once combined, stir in spinach, salt and cooled onion and garlic mixture.
6. Pour the mixture into lightly greased mini muffin cups.
7. Bake for 20-25 minutes or until the filling is set and golden on top.
8. Serve.

Hey! So this is my very FIRST blog ever! I am super super excited about this. I figured, Why not? I love reading everyone els'.  So, Let's get started. 

A little about myself. I am 22, I work at a AMAZING company and have the worlds best man in my life (I'm sure every girl in love thinks that....Nope, Mine is the best) I will more than likely refer to him a lot, His name is Jared

I love my job and JUST got promoted (like,TODAY!) I am now an iTunes Senior Advisor! Any iTunes questions, please contact support, I must get credit for my brains! haha. I feel VERY blessed to be a part of a company that is SO SO integrative and it's just been a pure blessing to be an employee here. Not to mention, Some of the BEST people work here. I met my boyfriend here! 


We have 2 amazing girls, Which I love love LOVE
(I say we, My boyfriend was warned it was a package deal when he asked me to be his girlfriend)  


This is Lucy and Kahlua. Kahlua is the white teacup malti-poo, and Lucy is my little runt dachshund. They are exact opposites in everything they do. I could not of gotten 2 more opposite dogs.. but, Here is the story. My mom (who you will meet later) has a dachshund named Charlie, Who yes.. Is a girl. Don't ask me why her name is Charlie.. no one in my family understands besides her. Well, Charlie got pregnant and had 6 puppies. I stayed up with her all night during the delivery.. and then finally went to bed around 4am, I did have school the next day (High school, seems like ages ago!) and when my mom woke me up, She said there were 7 puppies. I SWORE there was 6 when I went to bed.. In fact, I had a picture of just 6. Of course, I argued with my mom back, telling her NO there is only 6 and they are ALL boys :( 

Well... she was rite (like she always is, it seems) .. A little girl popped out after I had gone to bed, and AFTER the after birth came out, She was as small as could be & I HAD to have her. She's been with me ever since! 

Kahlua, She was another story. I have a friend, Who bought 2 new dogs. (kahlua) being one. I would go to her house, and she was always locked up & she was always SO excited to get out of the crate and play! My friend just didn't have time for her, So.. She gave her to me!!!!! I could NOT believe it! I was SO excited!!!  (the other one she bought, also went to a great home!) 

Whew! what a lot of writing! 



Anyways, I have always been insecure about my weight. Ever since I was little. Everyone was always tinier than me. They would grow, and I would grow WAY more, Outward... 

January 1st, 2012.. I decided to make a change (like every other American in the world). But, this time.. I'm sticking with it! 
Every day since I have been working out 5 times a week. 2 out of those 5 times, I work out twice a day (I still like to have my lazy days!) 
You would NOT believe the difference it has made in my life. I am SO MUCH happier! and full of energy! It is great. I have lost about 5 lbs thus far and have about 30 more to go! I intend to share fun recipes and progress over the time. 

i ALSO quit smoking December 9, 2011 which was a HUGE accomplishment for me! (go me! go me!)


One last little tid-bit..
